Cucumbers & Radishes in Sour Cream
1/2 cucumber, peeled and thinly sliced
1 cup sliced radishes
1/2 medium onion, thinly sliced
1 tablespoon vinegar
4 ounces sour cream
3/4 teaspoon salt
Place cucumber, radishes and onion in a large bowl. Cover with ice water. Combine sour cream, vinegar and salt. Chill. To serve: drain vegetables. Stir in sour cream mixture until vegetables are well coated. Serve immediately.
Serves 3.
