Radicchio is a leaf chicory, sometimes known as Italian chicory. It is grown as a leaf vegetable and has a bitter and spicy taste. The radicchio we see in grocery stores has white-veined red leaves which develop either in colder weather or when plants are placed in the dark to inhibit chlorophyll production. It is the same plant as the green variety you see in your CSA box, and the taste is much the same. Radicchio is low in calories and high in magnesium, potassium and vitamin A. It is 70% carbohydrate with just a small amount of protein and a trace amount of fat. The best uses for this green version of radicchio is in salads and slaws, but you can also use it as a cooking green.
