Roasted Potatoes, Onions & Celeriac

This recipe works best with red potatoes, but our Kennebec potatoes can be substituted. Also sweet onions are better than yellow onions, but you can use either...or substitute leeks.

3 medium potatoes, quartered
1 celeriac, peeled, cut into chunks
3 onions, cut into slices
2 teaspoons olive oil
2 teaspoons balsamic vinegar
Salt and pepper

Place vegetables in a roasting dish and toss to mix. Drizzle with olive oil and balsamic vinegar. Season to taste with salt and pepper. Roast in a 400 degree F. oven for 20 to 25 minutes until caramelized and golden.

Serves 4.
