Potato, Lettuce & Onion Soup

This is a great recipe for fall lettuce. The amounts for the ingredients are up to you:

Potatoes
Onions
Lettuce
Olive oil
Red pepper flakes
Salt to taste
Whole grain bread
Grated pecorino or gruyere cheese

Peel and chop equal quantities of potatoes and onions. Wash and shred lettuce. Place vegetables together in a pot and cover with cold water. Bring to a boil slowly, then reduce the heat to very low and simmer for 45 minutes. Add 3 tablespoons good olive oil, a pinch of hot red pepper flakes and salt to taste. Simmer for 5 more minutes.

Either mash the soup or puree half, and add back to the pan. Place a slice of toasted wholegrain bread in the bottom of wide flat serving bowls, and pour over the soup. Serve at once with grated pecorino or gruyere cheese on the side.
