From the Kids' Corner" - Potato & Tuna Cakes
These are great chilled for lunch boxes or summer picnics.
14 ounces potatoes, boiled, mashed and chilled
1 celery stick, finely diced
1 medium carrot, grated
1 6 1/2-ounce can tuna in oil, well drained
1 egg, beaten
Salt and pepper
1 cup dry breadcrumbs
Vegetable oil for frying
Combine cold mashed potatoes, celery, carrot and egg. Season with salt and pepper to taste. Mix until well combined. Form mixture into 10 patties and coat evenly in breadcrumbs. Heat oil in large non-stick frying pan over medium-high heat. Cook patties for 3 to 4 minutes on each side, until golden. Drain on paper towels.
Makes 10 patties.
