Easy Potato, Carrot & Celeriac Soup

Dice 4 large potatoes, 1 large onion, 1 small celeriac and 1 large carrot. Place in a 4-quart saucepan; add water until vegetables are just covered. Boil gently until carrots are soft. Do not drain. Mash until lumpy. Add 12 ounces of evaporated skim milk, 2 tablespoons butter, and salt and pepper to taste. Cook until warmed through.
