Recipes / Potatoes

Crushed Potatoes

2 pounds medium size new potatoes, unpeeled, scrubbed
Coarse salt, to taste
1 tablespoon olive oil
1 small onion, minced
1to 2 tablespoons chopped fresh parsley, sage or thyme
Freshly ground black pepper, to taste

Cook potatoes in lightly boiling water until just tender, 10 to 15 minutes. Drain. Preheat the broiler. Spray a baking sheet lightly with non-stick cooking spray. Place one potato on a clean kitchen towel and fold towel over potato. Press down on the potato firmly with the palm of your hand, crushing the potato lightly. Place crushed potato on prepared baking sheet, Repeat with remaining potatoes. Brush tops with oil. Broil until tops are brown and crusty, 5 to 8 minutes. Sprinkle with herbs, salt and pepper.
