Potatoes
Blue Cheese Potatoes
Serve these potatoes with grilled steak or spicy BBQ chicken.
1 1/4 pound small red potatoes
Pinch of salt
Olive oil for brushing
3 ounces blue cheese, crumbled
Cover potatoes with cold water in a medium saucepan; add a pinch of salt. Bring to a boil. Reduce heat and simmer until just tender, about 15 minutes. Drain; let cool slightly. Slice potatoes in half and brush lightly with oil. Place potatoes on a hot grill and grill, turning once, until lightly browned, about 5 minutes. Transfer to serving dish and immediately sprinkle with cheese.
Serves 4.
