From the "Kids' Corner" - Veggie Pizza

Sweet peppers are perfect for pizza! Have the kids help assemble this, arranging the veggies in whatever design they like.

1 prepared 12-inch pizza crust
Non-stick cooking spray
1 cup low-sodium tomato sauce
3 cups chopped veggies (peppers, onions, tomatoes, and zucchini are a good combo)
8 ounces low-fat mozzarella cheese, shredded
Fresh or dried oregano (optional)
Parmesan cheese (optional)

Preheat oven to 450 degrees F. Place pizza crust on a pizza pan or cookie sheet sprayed with non-stick cooking spray. Spoon tomato sauce onto crust. Arrange veggies over sauce. Sprinkle mozzarella over veggies. If desired, sprinkle with oregano and/or Parmesan cheese over the mozzarella. Bake 8 -12 minutes.

Makes 6 slices.
