From the "Kids' Corner" - Sweet Pepper Snack “Boats”

Thanks to Beth Panther, Illinois Benedictine University Dietetic Intern, for sharing this recipe! Beth says: “This easy snack is a fun way to introduce your child to fresh peppers, as well as a natural source of protein...but the best part is getting to play with your food!”

2 sweet bell peppers, seeds removed
1/2 cup prepared hummus

Slice the peppers into thick, long strips. Cut one of the strips into triangles. In each long strip, place 1 Tablespoon of hummus. Top the hummus with the pepper “sail.” Watch your pepper boats “drift” into your children’s mouths!
