Hot Banana Quesadillas

This may seem like an odd combination, but it’s remarkably tasty.

2 corn tortillas
1/2 ripe banana, sliced
1 teaspoon Czech Black or jalapeno pepper, minced
1/4 cup spicy sprouts
1/4 cup shredded jack cheese

On one corn tortilla, lay out banana slices, sprinkle with minced hot pepper, and sprinkle with sprouts and shredded cheese. Top with second tortilla.

Heat a non-stick skillet, sprayed lightly with oil. Lay the quesadilla in the hot pan gently, and cook 3 to 4 minutes until the corn tortilla starts to brown and crisp. Turn the quesadilla and toast the other side until brown. Serve hot.
