Onion-Walnut Whole Wheat Scones

Posted by Carole Koch

2 cups whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
6 tablespoons cold butter
1 onion, finely minced
1/2 cup chopped walnuts
Zest of half a lemon
3/4 cup buttermilk
2 tablespoons honey

Heat oven to 425 degrees F. Mix dry ingredients. Cut in butter with a pastry blender until it resembles coarse cornmeal. Add onions, walnuts and lemon zest. Dissolve honey in buttermilk; stir into flour mixture until just barely combined. Place dough on a floured board; knead 5-7 times. Shape into a round 1-inch high. Pierce top all over with a fork. Dust lightly with flour; cut into 8 wedges. Place wedges on an un-greased baking sheet; bake 15 minutes, until browned.
