Onion Sandwiches
Sliced raw onions are popular additions to many meat-based sandwiches, but they can also be featured as the main ingredient. Sweet onions are especially well-suited for use in this way:
For the bread, try a sweeter loaf like challah or brioche. Spread one side of one slice of bread with a thin layer of mayonnaise, and then top with a bit of chopped parsley. Add slices of sweet onion. Salt the onions and then top with another slice of bread. If desired, wrap and refrigerate for several hours for flavors to blend.
Variation: Use a flavorful dark bread like pumpernickel, or whole grain bread. Use either mayonnaise or butter for the spread. If you like sharp flavors, add some grainy mustard. Use parsley, basil or fresh chives as the herb.
