Onion & Apple Sauté

This dish makes a good accompaniment to a brisket or roast beef.

1 medium onion, halved, sliced thin
2 or 2 large apples, peeled, sliced in thin slivers
Cooking oil
1/4 teaspoon cinnamon
1/2 teaspoon sugar
Salt

Sauté onions in small amount of oil until soft but not brown. Add apples and cover pot. Cook over lowest possible heat until they are soft, stirring occasionally. Apples should let out some juice. If they do not, add a small amount of water just to keep them from drying up or burning.

When apples are soft and glazed looking, add one shake of salt, cinnamon and sugar. Stir, cover and cook another five minutes. Taste; add more sugar or cinnamon if you wish, but keep the taste delicate.

Serves 4 as a side dish.
