Onion & Apple Casserole

3 Granny Smith apples, sliced
1 large onion, chopped
2 tablespoons brown sugar
3/4 teaspoons cinnamon
3 tablespoons soaked currants
3 tablespoons butter

Sauté onions in 2 tablespoons of the butter until transparent. Add sugar, cinnamon, and currants. Line casserole with 1/3 of apple slices. Spoon on 1/2 currant/onion mixture. Add another layer of apples, then rest of onion mixture. Top with final 1/3 of apples. Dot with 1 tablespoon butter. Bake at 350 degrees F. for 45 minutes.
