From the "Kids' Corner" - Grilled Onion Chips

These onions are like potato chips, but a lot more nutritious.

Cut ends off 2 large sweet onions and remove peel. Cut onions in half lengthwise and separate layers. Cut larger pieces in half.

Place onions in zip lock bag and drizzle with 3 to 4 tablespoons of your kids’ favorite Italian dressing. Marinate for 1 hour.

Meanwhile, soak wooden skewers in warm water and prepare grill for high heat setting. (If using charcoal, which is preferred, coals should be hot but not flaming.)

Thread onion pieces onto skewers 1-inch apart. Place skewers on grill and actively turn as edges of onion are crisped. Make them as crispy as possible without burning them. Baste with marinade at least once during grilling.
Remove from heat and serve with sour cream and chive dip, if desired.

Serves 6.
