The Well-Dressed Salad

Crisp, cool and fresh, a tossed salad makes an excellent start or finish to almost any kind of meal. To be at its best, a salad should always be dressed just before serving. Here’s a quick and easy method:

In an empty salad serving bowl, pour extra-virgin olive oil around the insides of the dish. Add lettuce and herbs; toss gently with your hands, tongs or salad servers. Add vinegar, salt and pepper and toss again. All greens should be lightly coated with dressing. Use chilled salad plates or bowls to keep greens crisp and cool.

If you're using an already prepared dressing, simply pour over greens and toss well. But remember to use dressing sparingly. Under-dress rather than overdress - it's easy to add more.
