Spruced-up Lettuce

Lettuces are at their best in spring, tender and flavorful. Here are a few ideas to spruce-up your salad mix:

Add this week’s spinach, radishes, and/or garlic scapes to the salad mix. Toss with your favorite salad dressing. (Also try adding some finely shredded kale to the mix.)

Toast a handful of chopped nuts in a dry pan on medium heat. (Walnuts, pecans, almonds or hazelnuts are good choices.) Add to your salad for both added flavor and protein.

Add fresh or dried fruit. Pears, oranges, peaches, plums, apples, raisins, cherries or any kind of berry all work well. Not only does fruit make a sweeter salad, it also adds important nutrients.

Add tang with salty cheeses, such as Parmesan or bleu cheese.

Add crunch with carrots, peas, peppers, raw broccoli, green beans, cucumber or zucchini.

Add interesting texture with pumpkin or sunflower seeds.
