From the "Kids' Corner" - Lettuce Wraps

Thanks to Illinois Benedictine Dietetic Intern Lauren Brett for sharing this recipe! Lauren says: “The great thing about lettuce wraps is that kids can choose what they want on theirs and assemble it themselves!”

Assemble ingredients your kids like, such as:
Chicken, turkey, tuna, other meats
Shredded cheese
Mixed raw veggies such as small, thin carrots, peppers, broccoli, cucumbers, tomatoes, summer squash, broccoli, etc.
Ranch or an olive oil-based salad dressing
Other ideas: olives, avocados, fruit or nuts

Use one large leaf of lettuce (washed well) for each wrap. Have kids pick out what they want on their wrap and assemble ingredients down the center of leaf. Roll up and enjoy!

Another idea for a snack: Prepare the wrap and stick 2-3 tooth picks across it. Cut into pieces and serve as a snack or appetizer!
