Bulgur Pilaf with Basil, Garlic & Leeks

1 leek, finely chopped
1/8 to 1/4 cup dry orzo, other small pasta, or spaghetti broken into small pieces
2 cups stock or water
1 cup bulgur
Salt to taste
2 tablespoons finely chopped fresh basil
1 teaspoon minced garlic

Sauté finely chopped leeks. Add orzo or other pasta and sauté until brown. Add 2 cups stock or water and bring to a boil. Add 1 cup bulgur and salt to taste, reduce heat to low, cover and cook for 20 to 25 minutes. Let rest 10 minutes. Stir in basil and minced garlic.

Serves 2 to 4.
