Thanks to CSA member Julie Ott for sharing this recipe! Julie says: We... really enjoyed [this salad]...we used all three kohlrabi in making it and 3 apples.”

2/3 cup mayonnaise
1/3 cup sour cream
2 tablespoons sugar
2 teaspoons lemon juice
1 mature or 2 to 3 baby kohlrabi bulbs, peeled and cut into 1-inch dice
4 Fuji apples, cut into 1-inch dice
3 stalks celery, thinly sliced
1/2 cup toasted walnuts or pecans
Salt to taste, optional

Stir mayonnaise, sour cream, sugar and lemon juice in a medium bowl. Add kohlrabi, apples, celery and nuts. Toss and add salt, if desired.

Serves 4.
