Kohlrabi

Kohlrabi with Parmesan

The kohlrabi bulb is mild and sweet, with a juicy, creamy white interior. Although excellent raw in salads or for snacking, this recipe is a perfect way to introduce kohlrabi to kids and finicky eaters for the first time. Remember to save the kohlrabi greens to add to your cooking greens recipes!

3 medium kohlrabi, stalks and leaves removed
2 tablespoons unsalted butter or olive oil, or combination
1/4 cup grated Parmesan cheese
salt and pepper to taste
1 tablespoon minced fresh basil

Peel kohlrabi to remove fibrous outer layer. Shred with grater or food processor. Heat a medium skillet over medium heat. Add butter and/or oil. When oil is hot, add kohlrabi. Cook, stirring frequently, until vegetable is tender, about 8 minutes. Sprinkle with salt and pepper. Stir. Toss with cheese. Cook until cheese melts, about 1 minute. Garnish with basil.

Serves 4.
