Kohlrabi

From the "Kids' Corner" - Stir Fried Kohlrabi

Thanks to Benedictine University Dietetic Intern Erica Timmerman for sharing this recipe. If you’re not sure your kids will like the heat of the hot peppers, use less, or use sweet peppers instead.

2 cups kohlrabi, peeled and cut into 1/2-inch dice
2 jalapeno peppers, finely chopped (or other hot peppers)
4 leeks, white part only, chopped
3 sweet banana peppers, chopped into 3/4-inch pieces

Lightly spray a wok or skillet with vegetable oil, add all the veggies and stir fry until just heated through, approximately 8 minutes. Use a fairly high heat.

Serves 4.
