Raw Kale Salad

You could substitute another variety of sprouts if you like. If you don’t have flax oil or Celtic salt, use olive oil and sea salt instead. Try the same idea with Swiss chard, but remember that raw chard is much more tender than raw kale, so it does not have to be marinated very long, if at all.

1 bunch kale, torn into small pieces
1 red onion, finely sliced
1 avocado, diced
1 cup clover sprouts
1/3 cup lemon juice
3 tablespoons flax oil
1 teaspoon Celtic salt

Combine kale, onion, avocado and sprouts in a large bowl. In a small bowl, mix remaining ingredients and pour over vegetables. Toss gently and marinate 1 hour before serving.
