Marinated Kale
Strip leaves from stems of 1 bunch of kale and slice into 1-inch strips. In a bowl, combine 3 tablespoons fresh lemon juice, 1 tablespoon olive oil, 2 teaspoons finely minced garlic, and 1 teaspoon sea salt. Whisk to blend. Add kale and toss until well coated. Serve immediately or store, covered and refrigerated, for up to 1 day.
Serves 4 to 6.
