Kale with Caramelized Onion & Vinegar

1 tablespoon extra-virgin olive oil
1 large red onion, halved, thinly sliced
1 large clove garlic, thinly sliced
3/4 teaspoon coarse salt, divided
2 tablespoons red-wine vinegar
1 pound kale, cut into 1 1/2-inch pieces

Cook onion, garlic and 1/4 teaspoon salt in oil in a large sauté pan over medium heat, until onion is lightly browned, about 5 minutes. Reduce heat to low and cook until onion is soft, about 10 minutes. Add vinegar and raise heat to medium-high. Add kale, 1/4 cup water and remaining salt. Cook until kale softens, about 3 minutes. As pan becomes dry, add 1/4 cup water and cook about 3 minutes more.

Serves 4.
