Kale, Onions & Feta

CSA member Sharon Bauer says: “Someone asked us what the heck it is that one does with kale. So, John and I have taken the kale challenge and come up with a few good recipes. Thought I'd share them.”


Kale, Onions & Feta Omelet

Chop two or three kale leaves, steam. Sauté 1/4 of a large onion in butter or oil. You can add the kale if you want. Just before taking these off the fire, add some feta cheese so that it starts to melt, about 1/8 cup. Put 2 or 3 beaten eggs in omelet pan. When ready, add the above mix and voila... yummy and dee-licious omelet!


Kale, Onions & Feta Pizza

Simply use the kale, onion and feta mixture as toppings for pizza!


Kale, Onions & Feta Appetizers

Make appetizers on puff pastry, using kale, onion and feta as toppings. Can add tomato!
