Easy Scotch Kale & Rice
2 cups cooked brown rice
1/2 cup finely chopped kale
1/2 cup shredded carrots
2 tablespoons grated Parmesan cheese
Toss rice, kale and carrots together, and place into a steaming basket. Steam 4 to 5 minutes over boiling water until the rice is heated and the vegetables are tender. Place in serving bowl and sprinkle with cheese.
Serves 4.
