Cajun Kale Salad
Toss together:
1 small bunch kale, chopped, boiled, and drained
Kernels from 4 ears of boiled sweet corn
1 red bell pepper, diced
1 green bell pepper, diced
1 small sweet onion, minced
1 small clove garlic finely minced
1 1/2 teaspoon Cajun Spice mix*
Just before serving toss with 2 tablespoons fresh lemon juice.
Serves 4.
*Cajun Spice Mix: 2 teaspoons paprika, 1/2 teaspoon cayenne pepper, 1/4 teaspoon black pepper, 1/4 teaspoon allspice, 1/2 teaspoon dried thyme, 1/4 teaspoon white pepper.
