White Beans & Parsley

2 15-ounce cans cannellini (or other white beans)
2 1/2 tablespoons olive oil
Salt and pepper, to taste
1 1/2 tablespoons fresh lemon juice
3 tablespoons parsley, finely chopped
1/4 cup red onion, minced
2 cloves garlic, finely minced

Place beans, olive oil, salt and pepper in a saucepan and heat to a boil. Reduce to a simmer. Cook for 2 to 3 minutes more. Remove from heat and stir in lemon juice, parsley, red onion and garlic. Serve hot or chilled. Serves 4.
