Sage & Lemon Bread Crumbs

Mix together: 5 cups bread crumbs, 3 tablespoons finely grated lemon zest
and 5 tablespoons finely chopped fresh sage leaves. Add salt and pepper, to taste. Use as breading for chicken cutlets or fresh fish.
