Herb-Flavored Butter

Preserve your fresh CSA herbs by making flavored butter, which will keep in the freezer for a couple of months. Simply wash and dry the herb and remove stems. Chop leaves finely. Mix desired amount into softened butter. Reform the butter into a log, using freezer-quality plastic wrap, twisting the ends tightly to seal. Wrap once more, before freezing. When ready to use, thaw slightly at room temperature until softened just enough to slice into coins. Store in refrigerator until just before serving. Use the butter to top corn-on-the-cob or baked potatoes, to spread on sandwiches, bagels or corn bread, or as a simple topping for hot noodles or pasta.
