Herbed Egg White Scramble

Although this recipe calls for mixed herbs, you can just use this week’s CSA parsley or thyme, alone or mixed.

1 teaspoon unsalted butter
2 tablespoons diced sweet onion
4 large egg whites
1 1/2 tablespoons minced mixed fresh herbs
Kosher salt, to taste
Freshly ground black pepper, to taste
2 teaspoons grated Parmesan cheese

Heat butter in small skillet over high heat. Add onion; cook until slightly softened, about 2 minutes. Meanwhile, beat egg whites, herbs, salt and pepper in small bowl. Add to skillet. Let set about 30 seconds and then lightly scramble until just done, about 30 seconds to 1 minute. To serve, transfer to plate and sprinkle with
Parmesan cheese.

Serves 1.
