Gremolata

This mixture is a traditional garnish for osso buco, but it is great with lamb chops, bean dishes or rice. Try adding it to salads, soups or mashed potatoes.

2 tablespoons finely chopped flat-leafed parsley
1 teaspoon minced garlic (about 1 large clove)
1 teaspoon freshly grated lemon zest
Salt and freshly ground black pepper, to taste

Combine ingredients, seasoning with salt and black pepper, to taste.

Makes about 3 tablespoons.
