Garlic-Mustard Cauliflower Salad with Parsley

Mix well:
1 clove minced garlic
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon olive oil

Combine:
1 head of chilled steamed cauliflower, broken into florets
1 slivered red bell pepper
3 tablespoons chopped fresh parsley

Drizzle dressing over vegetables and serve.
