Danish Poached Fish

Serve this fish with boiled new potatoes and a cucumber salad.

4 cups water
1/2 cup white vinegar
1/2 cup white peppercorns
3 bay leaves
1/2 tablespoon dill seeds
1 tablespoon mustard seeds
1 pound firm-fleshed boneless, skinless white fish fillets

In a deep sauté pan, combine the water, vinegar and spices. Bring to a boil. Reduce the heat and add the fish. Simmer for about 8 minutes.

Serves 4.
