Super Smashed Garlic Potatoes

4 large Idaho potatoes, peeled
1 tablespoon extra-virgin olive oil
2 tablespoons butter
4 cloves garlic, chopped
4 scallions, chopped
1 cup ricotta cheese
1/2 cup milk, eyeball it
1 cup grated Parmesan cheese

Cut potatoes into small chunks. Place in a pot and cover with cold water. Cover bring to a boil over high heat. Uncover; cook until tender, about 15 minutes. In a small pot over medium-low heat add oil and then butter. When butter melts into oil, add garlic. Sauté garlic 1 to 2 minutes, add scallions and remove pan from heat. Drain potatoes; return them to the hot pot. Add the garlic and scallion mixture to the potatoes along with the ricotta, milk and grated cheese. Smash to combine potatoes with cheeses and milk. Season with salt and pepper, to taste.

Serves 4.
