Scape & Egg Tortilla
3/4 cup chopped garlic scapes
1/4 cup chopped scallions
1/2 teaspoon extra-virgin olive oil
1/8 to 1/4 cup hot water
Salt and pepper
2 large eggs
1 tablespoon extra virgin olive oil
Place garlic scapes and scallions in an small skillet with 1/2 teaspoon of oil, hot water and a pinch of salt. Cook, covered, over medium-high heat until tender, about 5 minutes. Drain well. Beat eggs with salt and pepper. Add remaining oil to skillet. When oil is hot, return scapes and scallions to skillet and spread evenly. Add eggs. Cover and cook over medium-low heat until top is set, about 2 to 3 minutes.
Serve 1.
