Garlic Vinaigrette

When you see how quick and easy it is to make this classic French-style vinaigrette, you’ll never use store-bought dressing again, because this tastes so much better!

1 garlic clove, lightly crushed with the flat side of a knife
1 tablespoon Dijon mustard
2 tablespoons red wine vinegar
2 tablespoons fresh lemon juice
Coarse salt and freshly ground black pepper
3/4 cup olive oil

Put garlic, mustard, vinegar and lemon juice in a small bowl; season with salt and pepper; whisk until blended. Whisking constantly, pour in oil in a slow, steady stream; whisk until emulsified. Let stand at least 30 minutes; remove garlic before serving.

Makes about 1 cup.
