Raisin & Fennel Relish
Try this relish with pork or lamb.
1/4 cup raisins
1/4 cup fresh fennel, finely diced
1/4 cup finely diced apple, sprinkled with juice of 1/2 lemon
1/4 cup celery, finely diced
2 tablespoons pine nuts, toasted
1/2 jalapeño, seeded and finely diced
1 tablespoon extra virgin olive oil
1 tablespoon aged balsamic vinegar
Sea salt and freshly ground pepper
Combine all ingredients and toss well.
