From the "Kids' Corner" - Fennel & Apple Soup
This soup is on the sweet side, which makes it great for introducing kids to this unusual flavor. The alcohol in the wine evaporates during cooking, but if you’re concerned, eliminate the wine and try using apple juice or cider instead.
2 cups low-sodium chicken broth
2 cups water
1/2 cup white wine
2 Golden Delicious apples, peeled, chopped
1 cup thinly sliced carrots
1 small onion, thinly sliced
1/2 cup chopped fresh fennel
1 bay leaf
1/4 teaspoon dried thyme leaves
6 whole peppercorns
Low-fat plain yogurt for serving, if desired
In a large pot, combine all ingredients except yogurt, and bring to a boil. Reduce heat and simmer, covered, for 20 minutes. Strain soup, reserving liquid. Remove bay leaf fro apple-vegetable mixture. Puree the mixture in a blender or food processor. Add the reserved liquid and bland well. Reheat soup and serve with a dollop of yogurt, if desired.
