Microwave Bread and Butter Pickles
4 cucumbers - unpeeled, sliced about 1/8" thick
1 or 2 onions - sliced
1/2 teaspoon salt
1/4 teaspoon turmeric
1/4 teaspoon mustard seed
1/4 teaspoon celery seed
1/4 teaspoon dill weed (optional)
1/2 cup white vinegar
1 cup sugar
Put cucumbers and onions in 1 to 1 1/2 Qt microwaveable bowl.
Combine salt, turmeric, mustard seed, celery seed, (optional) dill weed, white vinegar, and sugar. Stir and pour over cukes and onions. Cover and microwave on high for 5 1/2 - 6 minutes. Remove and stir. Re-cover and return to microwave and cook another 5 1/2 - 6 minutes on high. Pack into glass jars and refrigerate. Makes about 1 quart.
