From the "Kids' Corner" - Cucumber Dip
Here a dish kid’s can help make... and they’ll love it for dipping their favorite veggies!
1 large cucumber, peeled, seeded, and cut into 1-inch pieces
1/4 cup parsley
1 scallion
1/2 cup plain low-fat yogurt
1 tablespoon cider vinegar
Place all ingredients into a food processor or blender. Process until smooth. Chill.
Makes 1 cup of dip (4 servings).
