Cucumber & Green Onion in Orange Vinaigrette
Combine in a large bowl:
2 large cucumbers, peeled, split lengthwise, seeded, sliced
1 tablespoon minced shallot
6 large green onions, thinly sliced
1/2 cup orange juice
1/4 cup seasoned rice vinegar
1 tablespoon canola oil
Salt and pepper to taste
Toss and chill 3 to 6 hours. To serve, mix well and adjust seasoning.
Serves 8.
