Recipes / Cucumber

Chicken & Cucumber Soba

6 to 8 ounces cooked soba noodles (or whole wheat spaghetti)
1/4 cup Dijon mustard
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
3 tablespoons oil
1 tablespoon minced ginger
4 green onions, sliced
2 cucumbers, peeled, seeded, cut into 1/4-inch x 3-inch strips
2 cups cooked chicken strips, 1/4-inch x 3-inches long

In a small bowl, mix together the mustard, soy, and vinegar. Set aside. Heat the oil in a wok over high heat. Add the ginger and cook, stirring, for 10 to 15 seconds. Add the green onions and cook for 10 seconds. Toss in the cucumbers and chicken, and cook for another 10 seconds, then add the mustard/soy mixture. Simmer for about 1 minute and add the cooked noodles. Toss and cook for 1 minute longer.

Serves 2.
