Coriander Rice Pudding
4 cups milk
1/4 cup sugar
1/4 cup uncooked rice
1/4 teaspoon salt
1 teaspoon ground coriander seed
Scald milk. Add all other ingredients to milk in a 2 quart casserole. Stir well. Bake at 325 degrees F. for 2 hours or until rice softens and milk thickens. Stir every 20 minutes. If desired, add raisins.
Serves 4 to 6.
