Cilantro Rice Salad
1/3 cup vegetable oil
1/4 cup fresh lime juice
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups cooked long-grain white rice, room temperature
3/4 cup green bell pepper, chopped
3/4 cup red bell pepper, chopped
1/e cup green onions, thinly sliced
1/4 cup fresh cilantro, minced
Whisk the oil, lime juice, salt and pepper in a bowl until well blended. Add remaining ingredients and toss.
Serves 8.
