Celery & Cabbage Casserole
1/2 cup chopped celery
5 tablespoons butter
3 1/2 cups chopped cabbage
1/2 teaspoon salt
1/8 teaspoon pepper
1 tablespoon chopped pimento
1/4 cup dry bread crumbs
Sauce:
1 1/2 tablespoons butter
1 1/2 tablespoons flour
1 cup milk
1/4 teaspoon salt
Dash black pepper, to taste
Cook celery in 3 tablespoons butter for 10 minutes, stirring frequently. Add cabbage and cook 10 minutes longer. Pour into greased baking dish; add salt, pepper, and pimento. Meanwhile make sauce: melt butter, stir in flour, add milk gradually and cook slowly until thickened. Add salt and pepper. Pour sauce over cabbage mixture. Sprinkle bread crumbs over top and dot with remaining 2 tablespoons butter. Bake in 350 degree F. oven for 20 minutes.
