Braised Celery
If you do not have enough celery to make 6 cups, simply downsize the recipe accordingly.
6 cups celery, cut into 2” pieces
2 tablespoons butter
1/3 cup chicken broth
½ teaspoon salt, or to taste
1/8 teaspoon pepper
Combine all ingredients in a saucepan. Cover and simmer 20 to 25 minutes, just until crisp-tender. Serve at once.
