Celeriac Ideas

Try one of these simple ideas for serving celeriac. They are from an old version of “The Good Housekeeping Cookbook,” published in 1963.

Peel and slice a celeriac and then heat it in cream. Season to taste.

Peel a celeriac and cut into chunks. Steam or boil until tender. Drain well and mash. Add enough hot milk to beat until fluffy. Season to taste with salt and pepper.

Peel and cook celeriac (using desired method). When still hot, drizzle with vinaigrette. Chill and serve on mixed salad greens.
